<p>Having just had a couple of fun filled days at the Fringe in Edinburgh (my first experience!), I still had that wonderful feeling of returning to one of the most beautiful parts of Scotland, as I drove home along the ocean road, back to Ballantrae. As you reach the brow of the hill before descending to Turnberry, Ailsa Craig and Arran come into view across the sea and then the road meanders along the coast line with the sea shimmering on your right and hills and dales on your left. </p>
<p>This is part of the route that the Ayrshire Coastal path follows. It is a fabulous time of year to come walking or cycling in Scotland. Our Wolsey Lodge guests arriving today are coming from Arran and &nbsp;cycling around the Isle of Cumbrae</p>

I visit the garden to decide what to serve my guests for dinner. <a href="http://www.cossescountryhouse.com/dining.htm">www.cossescountryhouse.com</a>/ I have just picked raspberries for a Mille Feuille and home made raspberry and Brockman&#8217;s gin Ice Cream. <a href="http://www.thedrinkshop.com/products/nlpdetail.php?prodid=5191">Brockman&#8217;s Gin </a><br />
Brockman&#8217;s Gin is a great discovery in the kitchen, as it has so many botanicals that it enhances the flavour of many desserts. One of my favourites is Blackcurrant Creme Brulee.<br />

The Czar Plums are ripening  thus it will be a Czar Plum Sauce with the Gressingham Duckling breasts tonight on the menu. Courgettes are in abundance and the following recipe for Courgette cake will be for afternoon tea:<br />
80g raisins, 4tblspn water, 280g flour, 1/2 tspn cinnamon, 1/4 tspn salt, 1/2 tspn baking powder, 1 and 1/2 tspn bicarbonate of sod, 120ml of olive oil, 150 g demarara sugar, 1/2 vanilla pod,<br />
2 lightly beaten free range eggs, 1/2 kilo thinly sliced courgettes,<br />
grated zest of a lemon, finely chopped stem ginger and 2 free range egg whites.</p>
<p>Grease and line 1 large or 2 small cake tins.<br />
Pre heat the oven to 170C<br />
Place the raisins in the water and simmer until the water has been absorbed.<br />
Sift together dry ingredients.<br />
In a bowl beat together the oil sugar and seeds from the vanilla pod. Add the eggs and beat until smooth and thick.<br />
Mix in the courgettes, ginger, lemon rind and raisins, then fold in the dry ingredients. Finely beat the egg whites to a meringue texture and carefully add to the cake batter.<br />
Pour into the tins and bake for 1 and 1/2 hours until firm (and a skewer comes out clean).<br />
Leave to cool in the tins.<br />
Mix together cream cheese, maple syrup and lemon juice.<br />
Cut the cake in half horizontally, then fill and top the cake with the icing. Yum!</p>

			<content:encoded><![CDATA[<div class='posterous_autopost'>We had a wonderful evening amongst a large crowd watching a performance of <br />Jane Austin&#8217;s &#8216;Pride and Prejudice&#8217; at Castle Kennedy with the ruined castle <br />as the back drop. There was a terrific atmosphere and everyone had their <br />picnics, chairs and rugs on a lovely evening. The rain stayed away ( a <br />little breeze kept the midges away also)! <br />The actors were terrific and played all the different parts beautifully with <br />just the right amount of humour. If you missed it there is another opportunity tomorrow to see it at at <br />Culzean Castle at 7 pm
<p /> Culzean Castle and Country Park is celebrating success as a top-quality <br />visitor attraction today. The dramatic cliffside castle, which is widely <br />regarded as Robert Adam&#8217;s greatest masterpiece, and its extensive country <br />park have been confirmed again as a five star tourist attraction by Visit <br />Scotland. Culzean Castle and Country Park is one of Ayrshire&#8217;s most popular visitor <br />attractions. The castle boasts stunning interiors, including the impressive <br />Oval Staircase and Round Drawing Room, and a fine collection of furniture <br />and artworks and brings the grandeur of life from the late 18th century to <br />life for visitors. It is also home to a wonderful Armoury display, complete <br />with flintlock pistols and swords, which is the second largest collection of <br />its type in existence.
<p /> The wider country park has over 20 miles of paths and tracks, guiding <br />visitors through the wonderful woodland, designed landscapes and gardens, to <br />the Deer Park, the Swan pond and 5 kilometres of coastline with fascinating <br />rock pools and clean bathing beaches. <p>Australian guests stayed last night on their way to Ireland &#8211; a lot of <br />guests stop over before getting the ferry from either Cairnryan to Larne or <br />Stranraer to Belfast. Visitors arriving in Scotland often spend their first <br />night or two with us also. Local crab with tomatoes from the greenhouse and rocket with a grapefruit <br />and sweet chilli dressing; Pink Crailoch Lamb with garlic and ginger <br />finished with Madeira and Redcurrant sauce, new Anya potatoes, baked <br />courgettes with lemon, olive oil and mint, cobra beans and hot beetroot; the <br />dessert in the picture; Aiket Bri, Strathdon Blue and Gruth Dhu and <br />Tobermory cheese with home made oatcakes were all on the menu! All the <br />herbs, fruit and vegetables are from the kitchen garden. Sweet Peas filled <br />all the vases and as it was a damp evening the guests enjoyed their malt <br />whiskies in front of a log fire.</p>

Their journey takes them along the old Roman road through Heronsford to Colmonell passing the ruins of Craigneil Castle where one of the Kennedies was beheaded! You can stop and climb Knockdolian with it&#8217;s breathtaking views out to sea showing Ailsa Craig, Arran, the Mull of Kintyre, Ireland and inland, in the distance the Merrick hills can be seen.</p>
