Their journey takes them along the old Roman road through Heronsford to Colmonell passing the ruins of Craigneil Castle where one of the Kennedies was beheaded! Their journey takes them along the old Roman road through Heronsford to Colmonell passing the ruins of Craigneil Castle where one of the Kennedies was beheaded! It worth stopping at the Boar&#8217;s Head pub in Colmonell for a refreshment. Continue towards Ballantrae down the other side of the Stinchar Valley. You can stop and climb Knockdolian with it&#8217;s breathtaking views out to sea showing Ailsa Craig, Arran, the Mull of Kintyre, Ireland and inland, in the distance the Merrick hills can be seen.</p>

			<content:encoded><![CDATA[<p>The sun is shining again after 24 hours of lovely summer rain so all the plants are drenched, fresh and happy! Cosses has a beautiful hidden garden where guests can relax in a romantic setting soaking up the sun and the beauty. After the rain I can plant out the remaining bedding plants, cut back geraniums which have finished flowering and dead head roses and lupins. In Wolsey lodge tradition, our guests enjoy afternoon tea (lemon cake with strawberry jam yesterday) in the garden.<br />

In the kitchen garden I have picked mange tout, carrots, courgettes, spinach, chard and beetroot as well as several varieties of potatoes; and strawberries and gooseberries this week. I made strawberry jam yesterday.<br />
Our guests from Luxembourg wrote in our visitors book &#8220;What a wonderful place! Lovely hosts and Susan&#8217;s cuisine is absolutely out of this world!&#8221;</p>

			<content:encoded><![CDATA[<p>Susan Crosthwaite has been delighting her guests with amazing food (all home grown or locally sourced) for 20 years at Cosses Country House &#8211; one of those amazing gems hidden away in beautiful, unspoilt South West Scotland. Cosses Country House is a Wolsey Lodge and a 5 Gold Star Visit Scotland B&#038;B. Susan has written her own cook book and has been a member of the Scottish Food Guide since its foundation.’</p>

<p>She is using home grown fruit, vegetables and herbs, Ballantrae crab and Crailoch lamb, butchered by Dalduff; her local butcher for the last 20+ years.</p>
<p>She will be demonstrating a strawberry starter and dessert as strawberries are very much in season, and a lamb main course with home grown vegetables:</p>
<p>Ballantrae Crab and strawberry salad with a balsamic, horseradish and lemon dressing.</p>
<p>The crab meat from 6 large claws.                      Large strawberries                             Salad/rocket leaves</p>
<p>Lemon juice              Extra Virgin olive oil           Horseradish sauce                              Balsamic vinegar</p>
<p>Place a vegetable ring in the centre of each pate. Slice strawberries. Shred the salad leaves. Mix a little lemon juice and horseradish sauce into the crab with seasoning. </p>
<p>Place sliced strawberries, then shredded salad leaves, followed by crab meat into each vegetable ring, then repeat pressing lightly into the shape of the ring. When ready to serve remove the ring.</p>
<p>Mix together the lemon juice, olive oil. horseradish sauce and balsamic vinegar until thick then drizzle around the crab salad. Garnish with a whole strawberry.  </p>
<p>Roast Crailoch Loin of Lamb with garlic, ginger and Rosemary finished with Madeira and Redcurrant Sauce with Cosses Spring Cabbage with ginger and Minted Epicure Potatoes </p>
<p>1 boned Loin of lamb (serves 4 – 6 people depending on size) 2 garlic cloves &#8211; finely copped, 1small piece of fresh ginger – finely chopped,         sprigs of rosemary</p>
<p>150ml demi glace sauce;     Redcurrants     Madeira Wine   Redcurrant or Rowan jelly</p>
<p>Pull the skin from the lamb then remove the membrane. Rub with the garlic, ginger and some rosemary leaves. Pre heat the oven 200C. Steam the potatoes with a sprig of mint. Place the lamb in the oven for 15 mins. Pour over the Madeira and cook for further 5 mins.</p>
<p>Meanwhile heat the demi glace sauce with the jelly. Remove the meat from the oven and  add the juices to the sauce, reduce slightly. Add redcurrants just before serving</p>
<p>Steam the shredded cabbage with a little chopped ginger, whilst carving  the meat thickly. </p>

			<content:encoded><![CDATA[<p>I just love these long summer evenings when it hardly ever seems to get dark. The cottage garden is a dream with lupins, delphiniums and roses, and the kitchen garden is beginning to produce an abundance of fruit, herbs and vegetables. The guests relax in the garden over afternoon tea with chocolate cake, whilst I select the evenings vegetables. There is a choice of Swift or Epicure potatoes; spring cabbage, spinach or Swiss chard, a gourmet selection of lettuce and lots of fresh herbs. Strawberries and gooseberries are in season, well matched with Elderflowers for faulous desserts.<br />
i will be demonstrating at the Royal Highland show on Thursday, using all this seasonal produce.<br />

Other guests, this week have had great walking experiences doing the first section of the Ayrshire Coastal Path, walking aroung Glen Trool, the first section of the Southern Upland Way from Port Patrick and out to St.Ninians Cave on the Isle of Whithorn.<br />

The garden is looking glorious and guests have enjoyed afternoon tea and breakfast in the garden. It has rained all day today and provided a much needed watering of the garden.<br />

			<content:encoded><![CDATA[<p>Guests leaving this morning said that their visit to Cosses Country House was &#8216;the icing on the cake&#8217; to finish a lovely week touring Scotland. They said that the dinner was fabulous &#8211; Fresh asparagus with Marrbury Smoked Salmon and home grown salad leaves; Fillet of Dalduff beef with mushroom stuffed with spinach and roast beetroot with balsamic and saute potatoes; Blackcurrant Creme Brulee; Scottish Cheese and Home made oatcakes; finished with coffee and home made Tablet.<br />
They called in woodland Farm shop to buy farm house cheese &#8211; Ann Dorwood&#8217;s Aiket Brie  and Epicure potatoes to take back home to Ireland; then they were going for a walk in Castle Kennedy before going for the ferry.</p>
<p>It rained last night, which watered the garden, as I had planted out the runner beans &#8211; St George and climbing beans &#8211; Cobra. The first early potatoes (in the green house) will be ready at the weekend, the spring cabbage is almost ready, and everything else has grown after the rain &#8211; including the weeds!</p>
